Peanut butter, banana, flax, oatbran muffins

- DRY INGREDIENTS:
- 1 1/2 cup whole wheat flour
- 1/4 cup flax seeds (grounded)
- 1/4 cup oat bran flakes
- 1/2 cup brown sugar
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/4 cup walnut pieces
- 1/2 tsp salt
- WET INGREDIENTS:
- 3 OR 4 medium sized riped bananas (mashed)
- 1 cup peanut butter
- 1/2 cup melted butter
- 1/4 cup milk plus 1 tsp lemon juice (makes buttermilk)
- 2 large eggs
- 1 tsp vanilla extract
Directions
- Pre-heat oven to 375 degrees C.
- Mix the wet ingredients in a large bowl. Mix the dry ingredients in another large bowl. Then, add the dry ingredients slowly to the wet ingredients while mixing with an electric mixer. DO NOT OVERMIX.
- Pour mixture into a lined muffin pan and bake 20 to 22 minutes or until a toothpick comes out clean. Let cool and unmold.
