Peach Cobbler
A variation of my dad's peach cobbler recipe. Ingredients
- ½ Stick Butter
- ½ cup packed light brown sugar
- 1 vanilla bean, halved and scraped
- 1 tsp cinnamon
- 1 c unsweetened apple juice
- 1 tsp lemon zest
- 1/8 tsp cayenne pepper
- ½ c lowfat 1% milk
- ½ c whole wheat all-purpose flour
- 2 egg whites
- 1 tbsp baking powder
Directions
- Preheat oven to 375 degrees F.
- Combine butter, brown sugar, cinnamon, lemon rind, vanilla bean and apple juice into dutch oven over medium heat. Bring to a boil, reduce heat to a simmer. Add peaches and continue to cook 5-6 minutes or until juices are thickened and can coat the back of a spoon. Remove vanilla bean.
- Sift flours and baking powder on a piece of waxed paper. Beat together butter and sugar in a medium-sized bowl or stand mixer until light and fluffy. Beat in egg white. Fold in dry ingredients alternately with milk, stirring just to combine.
- Drop batter by spoonful or spatula over filling; Spread gently.
- Bake in preheated 375 degrees F. oven for 25 to 30 min or until crust is golden. Serve hot.
