  • Peach Cobbler

    A variation of my dad's peach cobbler recipe.

    Ingredients

    • ½ Stick Butter
    • ½ cup packed light brown sugar
    • 1 vanilla bean, halved and scraped
    • 1 tsp cinnamon
    • 1 c unsweetened apple juice
    • 1 tsp lemon zest
    • 1/8 tsp cayenne pepper
    • ½ c lowfat 1% milk
    • ½ c whole wheat all-purpose flour
    • 2 egg whites
    • 1 tbsp baking powder

    Directions

    1. Preheat oven to 375 degrees F.
    2. Combine butter, brown sugar, cinnamon, lemon rind, vanilla bean and apple juice into dutch oven over medium heat. Bring to a boil, reduce heat to a simmer. Add peaches and continue to cook 5-6 minutes or until juices are thickened and can coat the back of a spoon. Remove vanilla bean.
    3. Sift flours and baking powder on a piece of waxed paper. Beat together butter and sugar in a medium-sized bowl or stand mixer until light and fluffy. Beat in egg white. Fold in dry ingredients alternately with milk, stirring just to combine.
    4. Drop batter by spoonful or spatula over filling; Spread gently.
    5. Bake in preheated 375 degrees F. oven for 25 to 30 min or until crust is golden. Serve hot.
