Pea Salad on the Crunchy Side
I found this recipe on another site and adapted it to my own tastes...it is well recieved, even by those who do not like pea salad) each time i cook for my colleagues. Ingredients
- 1 bag (20 ounces) Frozen Peas
- 1 cup celery, diced fine
- 1 cup cauliflower, cut into small chunks
- 1/2 cut green onions (sliced, white and green parts)
- 3/4 cup cashews (roasted and chopped)
- 1 bottle (8 ounces) Ranch dressing)
- 1/2 cup ricotta cheese
- 1/2 cup bacon, crispy and chopped up
Directions
- Thaw the peas. Then add peas, celery, cauliflower, green onions and cashews to mixing bowl and mix thoroughly. Combine Ranch dressing and ricotta cheese in food processor, pour over pea mixture. Fold dressing into pea mixture and place in refrigerator to allow flavors to combine. Prior to serving add bacon.
