    I love meatloaf recipes! From my Mom's Lipton onion soup mix version, stuffed with cheddar cheese, stuffed with Spinach, with a hard boiled egg in every slice, stuffed with sundried tomato pesto and feta. I have tried so many and I like them all. But this basic meatloaf version from Paula Deen is my favorite everyday go to recipe. My son loves it and when he wants it he says can we have Miss Paula's meatloaf? This recipe is a doubled version because we love leftovers. But you can cut it in half just reduce you cooking time to about an hour.

    Ingredients

    • For Meatloaf:
    • 2-2.5 lbs Ground Beef
    • 2 tsp salt
    • 1/2 tsp pepper
    • 1 cup of finely diced onion
    • 2 eggs slightly beaten
    • 1-15oz can petite diced tomatoes w/juice (do not drain)
    • 1 cup quick oats
    • For Topping:
    • 2/3 cup ketchup
    • 4 tbsp brown sugar
    • 2 tbsp prepared yellow mustard

    Directions

    1. Preheat oven 375
    2. Mix all the meatloaf ingredients well and shape into a loaf and place in a baking pan. I shape it into a rectangle w a flat top to hold the topping better.
    3. Mix the topping ingredients together. I use a measuring cup and put the ketchup in first and measure the 2/3 cup then just add the brown sugar and mustard. Once all the brown sugar is mixed in pour it over the top of the meatloaf letting a little slide down to coat the sides of the loaf.
    4. Bake for 1 hour and 15 to 20 mins. Topping will just start to look carmelized.
    5. Remove to a plate and let rest 10 mins.
