  • Patti's Fresh Fruit Pizza

    Ingredients

    • 1 pkt Refrigerator sugar cookie
    •     Dough
    • 8 ounce Cream cheese -- softened
    •     (use lowfat if desired)
    • 1/3 c. Sugar
    • 2 Tbsp. Lowfat milk
    • 1 Tbsp. Orange rind
    • 1 tsp Vanilla
    • 3 x Red Delicious apples --
    •     Cored and sliced
    •     Don't peel
    • 2 x Bananas
    • 1 c. Pineapple chunks, liquid removed --
    •     Save juice
    • 10 x Fresh strawberries
    •     (I've used red seedles
    •     Grapes either Leave whole or possibly cut in half)
    • 1/2 c. Sugar
    • 1 Tbsp. Cornstarch
    • 1/4 tsp Salt
    • 1/2 c. Orange juice
    • 1/4 c. Water
    • 1 Tbsp. Lemon juice
    • 1 Tbsp. Lemon rind

    Directions

    1. Divide cookie dough in half. Place 1/2 softened cookie dough in each of two 9" greased pie pans. Spread with fingers up sides of buttered pans. Prick bottom and sides with fork and bake 10-12 min at 350. Cold Mix softened cream cheese with sugar, lowfat milk, and orange rind. Spread this over the cooled crusts. Core and slice unpeeled apples that have been dipped in the pineapple juice. Arrange over the cream cheese mix. Slice bananas and strawberries and arrange on top of apples. Place the pineapple chunks on top of pizza. To make the glaze, in a saucepan mix together sugar, cornstarch, and salt. Gradually pour in juice and water. Add in lemon rind. Bring mix to a boil and cook 1 minute. Cold. Drizzle glaze over fruit and chill. Cut into wedge shaped pcs. 12-15 servings
