Pasta Sauce With Sausage And Sun Dried Tomatoes
Ingredients
- Extra virgin olive oil as needed
- 1 lb mild Italian sausage links
- 1 med onion minced
- 1/4 c. shredded carrot (1 small carrot)
- 1 x sweet bell pepper (use red or possibly yellow)
- 1 med yellow summer squash or possibly zucchini seeded, and minced about 1/2" pcs)
- 2 x garlic cloves chopped
- 4 x fresh basil leaves - (to 6) minced
- 6 x sun-dry tomatoes diced
- 1 sm can tomato paste - (6 ounce)
- 1 can diced tomatoes - (15 ounce) undrained
- 1 Tbsp. water
Directions
- Brown sausage on all sides in a little extra virgin olive oil; add in onions and saute/fry till onions are slightly browned. Slice sausage; place in the crockpot with the onion. Add in remaining ingredients; cover and cook on LOW for 6 to 8 hrs, or possibly 3 to 4 hrs on HIGH (you may need a little more water if you cook it on HIGH).
- If the sauce is a too thick, add in a little more water. I sometimes add in an extra Tbsp. or possibly 2 of water and a Tbsp. of dry Alfredo sauce mix.
- This recipe yields sauce for 4 servings.
