  • Pasta Salad With Peas And Peppers

    Ingredients

    • 4 c. Bow tie pasta (12 ounce.)
    • 2 c. Frzn peas
    • 1 tsp Extra virgin olive oil
    • 2 cl Garlic, chopped
    • 1 x Sweet red and yellow pepper, minced
    • 1 x Green onion, minced
    • 1/2 c. Minced fresh parsley
    • 1/2 c. Extra virgin olive oil
    • 1/3 c. Parmesan cheese
    • 3 Tbsp. Lemon juice
    • 4 tsp Dijon mustard
    • 1/4 tsp Each salt and pepper

    Directions

    1. In large pot of boiling salted water, cook pasta for 8 to 10 min or possibly till tender but hard. Add in peas. Drain and return to pot.
    2. Meanwhile, in nonstick skillet, heat oil over medium-low heat; cook garlic and red and yellow peppers for about 8 min or possibly till softened. Add in to liquid removed pasta along with onion and parsley. Whisk together oil, cheese, lemon juice, mustard, salt and pepper; add in to pasta mix and toss to coat.
    3. Makes 4 servings.
