Pasta Salad With Peas And Peppers
Ingredients
- 4 c. Bow tie pasta (12 ounce.)
- 2 c. Frzn peas
- 1 tsp Extra virgin olive oil
- 2 cl Garlic, chopped
- 1 x Sweet red and yellow pepper, minced
- 1 x Green onion, minced
- 1/2 c. Minced fresh parsley
- 1/2 c. Extra virgin olive oil
- 1/3 c. Parmesan cheese
- 3 Tbsp. Lemon juice
- 4 tsp Dijon mustard
- 1/4 tsp Each salt and pepper
Directions
- In large pot of boiling salted water, cook pasta for 8 to 10 min or possibly till tender but hard. Add in peas. Drain and return to pot.
- Meanwhile, in nonstick skillet, heat oil over medium-low heat; cook garlic and red and yellow peppers for about 8 min or possibly till softened. Add in to liquid removed pasta along with onion and parsley. Whisk together oil, cheese, lemon juice, mustard, salt and pepper; add in to pasta mix and toss to coat.
