Papaya Salad (Som Tam Malakor)
Ingredients
- 1 x peeled and shredded green papaya
- 3 Tbsp. palm sugar
- 2 Tbsp. lemon juice
- 4 clv garlic
- 100 gm long bean, cut into 2.5 cm pcs
- 3 Tbsp. grnd dry shrimp
- 4 x red tomatoes, diced
- 5 x fresh green chillies
- 1 Tbsp. tamarind sauce
- 3 Tbsp. fish sauce
- 2 Tbsp. crush roasted peanuts
- 4 x lettuce or possibly swamp cabbage leaves
Directions
- Using a mortar and pestle, lb. garlic and chillies till well blended.
- Add in long bean, tomatoes and papaya, lb. lightly, about 4-5 times.
- Add in sugar, fish sauce, lemon juice, tamarind sauce and stir together.
- Taste and season as desired.
- Serve on cabbage leaves and garnish with roasted peanuts.
