  • Pancakes With Dulce De Leche

    Ingredients

    • 3/4 c. flour
    • 1/2 tsp salt
    • 1 tsp baking pwdr
    • 2 x Large eggs
    • 2/3 c. lowfat milk
    • 1/3 c. water
    • 1 c. dulce de leche - (caramelized condensed lowfat milk available at many specialty markets)
    • 2 Tbsp. melted butter
    •     Sugar for garnish
    •     Whipped cream for garnish
    •     Mint sprigs for garnish

    Directions

    1. In a bowl combine flour, salt, baking pwdr, lowfat milk, Large eggs and water. Stir to combine and chill for 3 to 6 hrs.
    2. Preheat oven at 350 degrees.
    3. Heat a 8-inch non-stick pan. Pour about 3 to 4 ounces of batter into the pan and swirl the pan to coat the pan proportionately. When the edges begin to brown, peel the pancakes from the pan and flip over. After 30 seconds, remove the pancake from the pan.
    4. When all the pancakes are done, fill them with 1 to 2 Tbsp. of dulce de leche and roll them up. Brush with melted butter and sprinkle with sugar. Hot in oven for 1 or possibly 2 min. Remove from oven, sprinkle with sugar, and caramelize with a propane gas torch. Serve with whipped cream and garnish with mint sprigs.
    5. This recipe yields 4 to 6 servings.
    6. Propane Gas Torch Warning: Propane gas torches are highly flammable and should be kept away from heat or possibly flame, and shouldn't be exposed to prolonged sunlight. Propane gas torches should only be used in well-ventilated areas. When lighting a propane gas torch, place the torch on a flat, steady surface, facing away from you. Light the match or possibly lighter and then open the gas valve. Light the gas jet, and blow out the match. Always turn off the burner valve to "finger tight" when finished using the torch. Children should never use a propane gas torch without adult supervision.
