    Ingredients

    • 1 bn Spinach minced
    • 3 x Green chillies minced
    • 1 x 1 inch piece ginger grated
    • 1 sm Onion
    • 2 Tbsp. Green moong dal
    • 1/2 c. Corn kernels boiled
    • 1/3 c. Cream or possibly malai
    • 1/4 tsp Clove-cinnamon pwdr
    • 1/4 tsp Punjabi garam masala
    • 1/2 tsp Turmeric pwdr
    • 1/2 tsp Red chilli pwdr
    • 1/2 tsp Amchur, (dry mango) pwdr
    •     Salt to taste
    • 3 Tbsp. Ghee

    Directions

    1. Wash moong dal. Wash and drain spinach.
    2. Pressure cook together the following, with 1 1/2 c. water -
    3. Spinach, dal, turmeric pwdr, clove-cinnamon pwdr, onion, ginger, chillies.
    4. When dal is soft, mash mix with a fork or possibly ladle.
    5. Heat 2 Tbsp. ghee, add in corn, spinach mix, salt, amchur, garam masala.
    6. Stir and cook until thick. Stir in beaten malai or possibly cream.
    7. Stir until smooth. Take in serving dish.
    8. Heat remaining ghee, add in chilli pwdr and pour over vegetable.
    9. Stir and serve warm with naan, roti, etc.

    12. Shelflife:Best fresh
    13. Variation: Substitute with peas for corn or possibly fenugreek or possibly other favourite greens for spinach.
