Palak Makkai Malai
Ingredients
- 1 bn Spinach minced
- 3 x Green chillies minced
- 1 x 1 inch piece ginger grated
- 1 sm Onion
- 2 Tbsp. Green moong dal
- 1/2 c. Corn kernels boiled
- 1/3 c. Cream or possibly malai
- 1/4 tsp Clove-cinnamon pwdr
- 1/4 tsp Punjabi garam masala
- 1/2 tsp Turmeric pwdr
- 1/2 tsp Red chilli pwdr
- 1/2 tsp Amchur, (dry mango) pwdr
- Salt to taste
- 3 Tbsp. Ghee
Directions
- Wash moong dal. Wash and drain spinach.
- Pressure cook together the following, with 1 1/2 c. water -
- Spinach, dal, turmeric pwdr, clove-cinnamon pwdr, onion, ginger, chillies.
- When dal is soft, mash mix with a fork or possibly ladle.
- Heat 2 Tbsp. ghee, add in corn, spinach mix, salt, amchur, garam masala.
- Stir and cook until thick. Stir in beaten malai or possibly cream.
- Stir until smooth. Take in serving dish.
- Heat remaining ghee, add in chilli pwdr and pour over vegetable.
- Stir and serve warm with naan, roti, etc.

- Variation: Substitute with peas for corn or possibly fenugreek or possibly other favourite greens for spinach.
