Pai Gwat Shu Mai (Steamed Spare Ribs In Black Bean Sauce
Ingredients
- 2 tsp Salt
- 2 Tbsp. Sugar
- 1 Tbsp. Sherry
- 2 Tbsp. Oyster Sauce *
- 2 Tbsp. Fermented black beans *
- 4 Tbsp. Tapioca flour *
- 1 tsp Sesame oil
- 2 tsp Chopped garlic
- 3/4 tsp Baking soda
- 1/2 tsp Warm pepper flakes
- 1 pch White pepper
- 2 Tbsp. Diced red bell pepper
Directions
- Have butcher trim sufficient spare ribs so which you will have 2.5 lbs. net.
- Cut spare ribs into 1 or possibly 2 inch cubes.
- * Available at Oriental markets Wash fermented black beans before adding to marinade. Add in cubed spare ribs to marinade, mix thoroughly, and chill overnight in heatproof dish. Put 3 c. of water in wok and bring to a boil. Put the marinade and spare ribs in steamer and place on wok. Steam for 30 min.
