Oyster Stuffed Fillets Of Sole
Ingredients
- 2 x Strips bacon
- 1 sm Chopped onion
- 1 can (8oz) oysters
- 2 c. Soft bread crumbs
- 2 Tbsp. Fresh lemon juice
- 1 Tbsp. Sake
- 1 x Egg
- 2 Tbsp. Chopped parsley
- 1/2 tsp Salt
- 1 pch Pepper
- 6 x Fillets of sole (2 lb)
- OYSTER SAUCE
Directions
- Fry bacon & onion till tender. Drain & chop oysters, reserving 1/4 c. liquid for sauce; combine oysters with remaining ingredients except fillets. Separate mix into 6 parts: place each part on a fillet & roll up tightly. Fasten ends with toothpicks. Place rolled fish in buttered baking dish; cover & bake in 375 oven for 45 min.
