Oven potatoes with horseradish stuffing
A great autumn recipe..... Ingredients
- 4 big potatoes
- 1 onion
- 1 cloveof garlic
- 2 tomatoes
- 1 tablespoon oil
- 2 tablespoons fresh parsley
- 1 tablespoon tomato paste
- 2 tablespoons fresh shredded horseradish
- 2 tablespoons capers
- 80g shredded salted cheese
- 1 egg
- salt,pepper
- 1 tablespoon lemon juice
Directions
- 1.Heat the oven.Wash well potatoes and insert them in the oven for 60 minutes.
- 2.Peel the onion and garlic,and chop them.Peel and chop,also tomatoes.
- 3.Stew onion in oil.add garlic,parsley and tomatoes and stew another 5 minutes.Add tomato paste.
- 4.Take out potatoes,cut them in half and pull out 1,5 cm from the interior.
- 5.Press the potato middle and add it on the tomatoes.Put the horseradish,capers,salted cheese and egg.Put spices.
- 6.Stuff the potatoes with this mix and lay them on a smeared tray.Bake for 15 minutes.
