Oven Fried Corn Flake Chicken & Sweet ~ Garlic Broccoli
Adapted from the box of: Kellogg’s Corn Flakes. This chicken and sweet broccoli is delicious. I guarantee that you will be asked to make it again! Enjoy with Much Love, Catherine xo Ingredients
- 3 lbs. Chicken breast
- 7 cups corn flakes
- 1 egg
- 1 cup milk
- 1 cup all-purpose flour
- 1 tsp. paprika
- 1 tsp. chili powder
- 1 tsp. garlic powder
- 1 tsp. fresh ground black pepper
- Olive oil – drizzling
- Sweet Garlic Broccoli Ingredients:
- 1 bunch of fresh broccoli
- 7 cloves of garlic – chopped
- 1 tablespoon brown sugar
- 1 tablespoon lemon juice
- 1 cup of water
Directions
- Corn Flake Chicken Preparation:
- Preheat Oven 350 degrees:
- Place the corn flakes in a food processor and add the spices. Give a few chops. Do Not over process the corn flakes and make them too fine.
- Combine the egg, milk and flour in a bowl and mix until smooth. Dip the chicken in the batter and then coat with the cereal.
- Drizzle a little olive oil in the bottom of a baking dish and place the chicken in the baking dish. Drizzle a little olive oil on top of the chicken and bake for about 45â50 minutes or until the juices run clear. Let the chicken rest, before serving, for about 5-10 minutes after taking it out of the oven.
- Sweet Garlic Broccoli :
- Heat a saucepan with a drizzle of olive oil and place the broccoli in the pan. Add a cup of water and cover. In a small bowl combine the brown sugar, lemon juice and garlic. Add to the broccoli and steam for about 5-6 minutes. Do not overcook the broccoli. Let it remain a beautiful green.
