    Summer is here and it is picnic time! Alessa and I will be featuring some wonderful picnic recipes this month for those family outings or perhaps a romantic picnic with your significant other. The word picnic always makes me think of cold fried chicken and potato salad. Two dishes my mother always made in the summer time. I am trying to cook and eat healthier at my house so I decided to alter her wonderful fried chicken slightly. We also like spicy at my house so I added a few “extras” to her chicken coating recipe. This recipe makes the most tender flavorful tenders. Perfect for even your pickiest eater!

    Ingredients

    • 2 chicken breasts, skinless and boneless
    • 1 cup flour
    • 1 cup bread crumbs
    • 1 teaspoon Old Bay seasoning
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon paprika
    • 1/2 teaspoon cayenne pepper
    • 2 eggs

    Directions

    1. Spray a cookie sheet with cooking spray 3 times to coat completely. Preheat oven to 400 degrees.
    2. Cut the chicken breasts up into 4 or 5 strips each breast. Mix the eggs in a bowl. Mix together in a gallon zip lock bag the flour, bread crumbs and all the spices. Put the chicken pieces in and shake to coat completely.
    3. Place chicken on cookie sheet and spray each piece of chicken with cooking spray. Bake 20-25 minutes until chicken is golden brown. Makes 8 servings.
