ORGANIC BREAD PUDDING WITH RASINS
BAKE AT 350 DEGREES F. FOR 45 MINUTES VARIATION: CHOCOLATE BREAD PUDDING MELT 6 OUNCES OF BUTTER & 12 OUNCES OF CHOCOLATE TOGETHER. ADD THE CHOCOLATE AND BUTTER TO THE EGG MIXTURE AND CONTINUE WITH THE RECIPE. Ingredients
- 1 CUP ORGANIC RAISINS
- 4 TABLESPOONS. ORGANIC BUTTER, TO SOFTEN
- 1 1/2 CUPS THAI COCONUT MILK
- 1/2 CUP ORGANIC COCONUT CREAM
- 3 CUPS ORGANIC ARNOLD OATNUT BREAD
- 6 ORGANIC EGGS
- 2 CUPS ORGANIC SUGAR
- 1 TABLESPOON ORGANIC VANILLA EXTRACT
- 1 TABLESPOON ORGANIC COCONUT EXTRACT
Directions
- SLICE THE BREAD INTO SMALL CHUNKS AND PLACE IN A LARGE BOWL. POUR THE COCONUT MILK & CREAM OVER THE BREAD & SET ASIDE UNTIL SOFT.
- BEAT THE EGGS AND SUGAR UNTIL SMOOTH AND THICK. ADD THE VANILLA, COCONUT EXTRACT AND THE MELTED BUTTER AND RASINS.
- TOSS THE EGG MIXTURE WITH THE BREAD TO BLEND.
- POUR INTO THE PREPARED 10" X 10" X 3 " DEEP GLASS PAN.
- BAKE AT 350 DEGREES F UNTIL BROWNED, ABOUT 45 MINS.
