Orange Marmalade Pears
Ingredients
- 2 Tbsp. + 2 tsp pineapple-orange
- . juice concentrate, thawed
- 2 Tbsp. Orange marmalade, all fruit
- 1 Tbsp. Brown sugar, packed
- 1 Tbsp. Orange peel, grated
- 2 sm Pears, halved & cored
- 1/2 c. Yogurt, plain, low fat
Directions
- 1. In 8" round baking pan, combine juice, marmalade, 1 Tbsp. water, the sugar and orange peel. Place pears, cut sides down, in pan (small ends toward center). With vented cover, microwave on High 6- 7 min, spooning liquid over pears once.
- 2. With slotted spatula, remove pears to serving plate. Chill till well chilled. Cold cooking liquid. Add in yogurt to cooled liquid, stirring to combine; chill till ready to serve. Top each pear half with 2 Tbsp. yogurt mix.
