Orange Coffee Cake With Rosemary Streusel Topping
Ingredients
- TOPPING
- 1/2 ounce Grape-Nuts
- 2 Tbsp. Granulated Sugar
- 1 Tbsp. Fresh Rosemary Leaves
- 2 tsp Unsalted Butter
- CAKE
- 1/4 c. Granulated Sugar
- 1/4 c. Unsweetened Applesauce
- 2 x Egg Whites
- 2 Tbsp. Extra virgin olive oil
- 2 tsp Extra virgin olive oil
- 1 Tbsp. Orange Juice, From Frzn Concentrate Thawed
- 1 c. Flour Sifted
- 1 tsp Baking Pwdr
- 1/8 tsp Cinnamon
- 1 pch Salt
- 1 1/2 c. Mandarin Oranges liquid removed segments
Directions
- Preheat oven to 350 , spray 8" round baking pan with nonstick cooking=
- spray.
- To prepare topping, in small bowl, combine cereal, sugar, rosemary and butter, blend with fingertips till mix forms coarse crumbs. Set aside.
- To prepare cake, in large bowl, whisk together sugar, applesauce, eggwhites, oil, 1 Tablespoons water and the juice concentrate till well blended.
- Holding sifter over bowl, sift the flour, baking pwdr, cinnamon & saltonto mix, fold lightly till just blended. Gently stir in orange segments.
- Spread batter proportionately into prepared pan; sprinkle proportionately with topping bake till lightly browned & toothpick inserted in center comes out clean,=
- 30-35 min.
