Orange And Avocado Salad With Cumin Vinaigrette
Ingredients
- 2 med Oranges
- 1 lrg Ripe avocado
- 1 x Green onion -- incl
- Top:sliced
- Salt & pepper
- CUMIN DRESSING-----
- 2 1/2 Tbsp. Extra virgin olive oil
- 1/2 Tbsp. Red wine vinegar
- 1/2 Tbsp. Orange juice
- 1/2 tsp Sugar
- 1/8 tsp Grnd cumin
- 1 sm Clove garlic: pressed
Directions
- Using a sharp knife, cut peel and all white membrane from oranges. Cut oranges crosswise into 1/4" slices. Peel and pit avocados; cut lengthwise into 1/2" wedges.
- Arrange orange slices and avocado wedges on a platter. Pour cumin dressing over them. Sprinkle with onions. Season with salt and pepper to taste, and serve.
- CUMIN DRESSING: Whisk together extra virgin olive oil, red wine vinegar, orange juice, sugar, grnd cumin, and garlic. Cover and let stand for at least 1 hour to let flavors blend. Stir to reblend before using.
