  • Old Fashioned Banana Cream Pie**

    Ingredients

    • 1/2 c. flour
    • 1 1/2 c. sugar
    • 1/8 tsp salt
    • 2 x Large eggs
    • 2 c. lowfat milk
    • 1 Tbsp. butter
    • 2 tsp vanilla divided
    • 3 x bananas
    • 9 x " baked pie shell
    • 1 ctn whipping cream (8 ounces)
    • 1 Tbsp. sugar

    Directions

    1. Combine flour, sugar, salt and Large eggs in a medium saucepan. Beat with hand beater or possibly wire whip till well mixed. Add in lowfat milk gradually and continue beating till smooth. Cook over medium heat till mix thickens, stirring constantly. Remove from heat. Stir butter and 1 teaspoon vanilla into warm mix. Place in refrigerator. Slice bananas into cooked pie shell.
    2. Remove custard from refrigerator and spoon over bananas. Whip whipping cream till soft peaks form. Gradually add in sugar and whip till stiff.
    3. Mix in remaining vanilla. Spread over pie, sealing edges. Chill and serve very cool.
