  • Oatmeal Red Fife Banana Bread

    I didn't have buttermilk so I add a half teaspoon vinegar to the same amount of milk.

    Ingredients

    • 1 C. flour
    • 1/2 C. Red Fife flour
    • 1/2 C. oats
    • 1 tsp. baking soda
    • 3/4 tsp. salt
    • 1/2 C. chocolate chips
    • 1/4 shredded coconut
    • 1/2 C. walnuts
    • 2 eggs
    • 1/4 C. sugar
    • 1/4 C. coconut oil, melted
    • 3 ripe bananas, mashed
    • 2 tsp. vanilla
    • 5 Tb. buttermilk

    Directions

    1. Preheat oven to 350 degrees F. Toast walnuts in over for 5 minutes and set aside to cool.
    2. Stir together flours, oats, baking soda and salt. Stir in chocolate chips, coconut and walnuts. Set aside.
    3. Beat eggs with the sugar and coconut oil. Add mashed bananas, vanilla and buttermilk.
    4. Add flour mixture. Stir to moisten.
    5. Dump it into a greased and floured 9"X5"X3" loaf pan.
    6. Bake at 350F. for about 55 minutes or until done.
    7. Cool 10 minutes.
    8. Remove from pan and cool on a rack
