  • Oatmeal Cookies, Penny's

    Ingredients

    • 1/2 c. Applesauce
    • 1/2 c. Brown sugar packed
    • 1/4 c. Granulated sugar
    • 1 x Egg
    • 1/2 tsp Vanilla
    • 3/4 c. Flour
    • 1/2 tsp Baking soda
    • 3/4 tsp Cinnamon
    • 1/4 tsp Sea salt
    • 1 1/2 c. Quick-cooking oats
    • 2 Tbsp. Walnuts minced
    • 2 Tbsp. Hershey's Reduced Fat Baking Chips

    Directions

    1. Preheat oven to 350F.
    2. In a large bowl, whisk together sugars and applesauce till mixed well. Add in egg and vanilla and beat well.
    3. Add in flour, soda, cinnamon and salt, mix well but don't beat.
    4. Mix in nuts and chips.
    5. Drop by heaping Tbsp. onto parchment lined baking sheets.
    6. Bake for 10 mins, or possibly till brown. Don't overbake.
    7. Cook on racks.
    8. Makes 16 cookies
    9. NOTES : Today I had such a craving for an Oatmeal cookie I decided to make some. But, when I looked at the recipe on the box of Quaker Oats the first ingredient was 2 sticks of butter! I do not think so! So I decided to try and slim down the recipe and see what happened. I cut the recipe in half so which if it was a disaster I wouldn't have wasted as much food. I eliminated the butter altogether and used applesauce instead. I also added some minced walnuts and lo-fat baking chips.
    10. The results was a very good cookie. I'm so proud!
