    Not Just For Kids...PB & J French Toast Sticks

    PB&J is a beloved kids favorite but this delightful French toast is bound to be everybody’s favorite. Simple simple to make and with ingredients you probably have on hand, You’ll surely have time to make it even on busy mornings. We’re making ours skinny by using whole wheat bread, natural unsalted peanut butter, reduced-sugar preserves and egg whites.

    Ingredients

    • 4 slices whole-wheat sandwich bread, we like Milton’s multigrain bread
    • 4 tablespoons natural unsalted chunky peanut butter, see shopping tip
    • 8 teaspoons reduced-sugar strawberry preserves or your favorite, see shopping tip
    • 4 egg whites
    • 1½ tablespoons fat-free milk
    • ½ teaspoon vanilla
    • 4 teaspoons reduced-fat butter or Smart Balance Heart Right Light
    • 2 teaspoons powdered sugar

    Directions

    1. Spread 1 tablespoon peanut butter on 2 slices of bread. Spread 2 teaspoons preserves on remaining 2 slices.
    2. In a 9-in. baking dish, whisk eggs, milk and vanilla. Place the 2 sandwiches in the dish and let soak on each side.
    3. Melt reduced-fat butter or spread in a large nonstick pan over medium heat. Cook the sandwiches until golden brown, 2 minutes per side. Cut each sandwich in four sticks. Sprinkle the top of each with powdered sugar and serve immediately.
    4. Makes 4 servings, 2 sticks each
