  • Not another meatloaf!!!

    This is the best. Meatloaf has never been a favorite of mine so it became a challenge to create one that even I liked. Here it is, and either fresh & hot, or cold sanwiches with mayo the next day... it works for me.

    Ingredients

    • 3 pounds of ground beef (I make alot!)
    • good splash of olive oil
    • 4 brats, the uncooked kind
    • 3 regular carrots
    • 1 vidalia onion
    • 3 ribs of celery
    • couple of garlic cubes, minced
    • 2 cups of seasoned bread crumbs
    • 4 tblsp. worcestshire sauce
    • 16 ounce can of store bought tomato sauce
    • bbq sauce for top glaze if you like

    Directions

    1. In a good size saute pan, add the olive oil, heat till medium.
    2. In food processor finely chop the onion, carrots &celery & garlic.
    3. Add to pan and saute till soft. add the worces. sauce and tomato sauce, simmer for a minute, remove from heat, add bread crumbs, stir up well, and then let cool.
    4. In a large bowl, place the beef, squeeze the brats out of their skins and add, and mix with your hands well.
    5. Add the eggs and mix again.
    6. When the vegetable mixture is cooled off, add this to meat and mix again with your hands. Spread it out into what shape pans you prefer, bake at 360 till internal temp is almost 160.
    7. Remove from oven, spread your favorite bbq sauce on top, and broil for a couple of minutes till nicely browned.
    8. Drain off grease before cutting.
