  • Nosh Paella

    Ingredients

    • 100 ml Extra virgin olive oil
    • 400 gm Corn-fed chicken pcs, skin on
    • 1 sm Spanish onion
    • 120 gm Tomatoes, skinned, seeded and cut into quarters
    • 2 x Cloves garlic, crushed
    • 1 tsp Saffron, soaked in 1tbsp warm water
    • 120 gm Paella rice, (risotto rice will do)
    • 120 gm Cleaned fresh squid rings
    • 1 tsp Paprika
    • 1 pch Chilli pwdr
    • 12 x Cooked prawns, shell on
    • 20 fl ounce chicken stock
    •     Sea salt and freshly grnd black pepper

    Directions

    1. Heat the paella dish till warm then add in the oil and heat till warm. Brown the chicken pcs and onions and when golden, add in the squids, tomatoes and rice. Add in the stock, saffron, paprika, seasoning (including the chilli if you like) and stir briefly to mix together and when stock is boiling turn down heat till a slow simmer.
    2. Cook till the mix is a risotto like consistency and the chicken pcs are cooked throughout. When the final point is approaching, place the cooked prawns on to the top of the paella. For a different flavour mussels can be added at the beginning with the squids, if you like.
