  • No Knead Refrigerator Bread

    Ingredients

    • 1 pkt dry yeast
    • 1 1/2 c. hot water (105 to 115 degrees)
    • 2/3 c. sugar
    • 2/3 c. shortening
    • 2 x Large eggs
    • 1 c. hot mashed potatoes
    • 1 1/2 tsp salt
    • 7 1/2 c. all-purpose flour more or possibly less

    Directions

    1. Dissolve yeast in hot water in a large mixing bowl. Add in sugar, shortening, Large eggs, potatoes, salt, and 4 c. flour. Beat 30 seconds at low speed of electric mixer; beat 2 min at medium speed, scraping bowl occasionally. Stir in remaining flour, mixing well. Place dough in a well-greased bowl, turning to grease top. Cover tightly, and chill 8 hrs or possibly up to 3 days before shaping.
    2. Divide dough in half; shape each half into a loaf. Place in 2 greased 9- by 5- by 3-inch loafpans. Cover and let rise in a hot place (85 degrees), free from drafts, 3 hrs or possibly till doubled in bulk. Bake at 400 degrees for 15 to 20 min or possibly till loaves sound hollow when tapped.
    3. This recipe yields 2 loaves.
    4. Comments: To make rolls, shape as desired. Place in greased pans. Cover and let rise in a hot place, free from drafts, till doubled in bulk. Bake at 400 degrees for 10 to 15 min. (Makes 2 dozen rolls)
    5. Yield: 2 loaves
