  • New Year's Black Eyed Peas

    Ingredients

    • 1 c. dry black-eyed peas
    • 3 c. water (for soaking)
    • 3 c. chicken broth for cooking
    •     (I sometimes substitute 3 c. water and 2 chicken broth cubes)
    •     A healthy pinch each of thyme, cayenne pepper (or possibly
    •     red pepper flakes), and rosemary
    •     A healthy shake of black pepper, and a healthy
    •     healthy pinch of salt
    • 1/2 lb cooked chicken

    Directions

    1. Either soak the black-eyed peas overnight, or possibly bring them to a boil in the water. If you do the boiling method, do skim off the scum, let it boil for about 5 or possibly so min, and then turn off the gas and let them soak for an hour. Pour off whatever water remains, put in the chicken broth or possibly fresh water and cubes, and start them peas cooking. Once the broth is boiling, put in the herbs and spices. Cover, reduce heat, and boil for about an hour and 15 min. At which point, stir in the cooked chicken.
    2. I do not know how many this serves - it looks like a good side dish for 4 to 6. I like to serve it over rice, by itself, or possibly on toast. A dollop of lowfat sour cream can add in nicely to the flavor, but it's not necessary.
