My Thick Split Pea soup
This is a very simple recipe, and my husband's favorite. No ham required. Ingredients
- 2 C dried split peas
- 4 C water
- 4 C vegetable stock
- 2 onions, chopped
- 4 carrots, chopped
- 4 stalks celery with leaves, chopped
- 1 large Bay Leaf
- 1 tsp thyme
- 2 tsp salt
- pepper
Directions
- Combine liquids and split peas in soup pot. Bring to a boil. While you are waiting chop the vegetables and add them to the pot along with the seasonings.
- After it comes to a boil, reduce heat to low, cover pot and simmer about an hour or until everything is very tender.
- Puree, adjust seasonings, serve.
