    Nothing better then a one pot meal that makes you smile. This is easy to make and messy to eat. Its even more fun if you catch the Crayfish yourself. Taste good either way, so if you need to buy them. This a inexpensive way to feed a large group. If you catch the crayfish and don't use shrimp. Grow your own vegetables or buy them on sale its only pennies per serving.

    Ingredients

    • 5 pounds crayfish
    • 2 pounds shrimp (optional)
    • 1-2 pounds smoked sausage, cut in to 14 to 2 inch pieces
    • 2 fresh lemons, cut into quarters.
    • 1 large onion, cut into 4 to 6 large wedges
    • 3 pounds small potatoes, cleaned leave whole (use any kind you like. I mix them and use gold and red for the color.)
    • (4-5 ears of corn, cut into about 2 inch pieces.
    • 1 cup Zatarain's Crawfish, Shrimp & Crab Boil. (adjust to taste or make your own mix.)
    • Water for boiling.

    Directions

    1. Use a very large pot start Potatoes (they take the longest to cook) mix Zatarain's into cool water add the potaoes heat on high for about 10 minutes till potatoes are about half way done. you might need to adjust the time for altitude and size of potatoes.
    2. While the potatoes are cooking prepare the lemon, onion, corn and sausage. Add to to pot making sure there is enough water to cover if not add hot water. Boil another 5 minutes.
    3. Add crayfish cook for 5 minutes. If you are adding shrimp add and cook until shrimp opaque between 2-5 minutes.
    4. Serve with melted butter and lemon wedges.
