Moroccan fish ....yum!

- 1 lb white fish (halibut or tilapia good)
- 2 potatoes
- 1 green or red pepper
- 1 yellow pepper
- 1 onion
- 1 zucchini
- 2 roma tomatoes
- 1 bunch cilantro
- mix 1 tsp s, 1 tsp pepp, 1 tsp paprika, 1/2 tsp turmeric, 1/2 tsp cumin, 1 clove garlic, 2 tbsp olive oil 1/2 cup water and pour over.
Directions
- Slice all veggies 1/4" thick.
- In large saucepan layer 2 layers potato slices, then 1 lb fish fillets of then, all veggies and then cilantro on top.
- Pour sauce over. Simmer over Medium heat covered for 30 min. every 10 min tilt pan sideways and scoop liquid to baste all over.
- May need more salt at end :) Can substitute Curry instead of Cumin and Turmeric.
