Mom's Rhubarb Custard Pie
Ingredients
- Pie crust
- 4 c. minced rhubarb
- 4 Large eggs
- 2 c. sugar
- 1 teaspoon lemon juice
- 1/8 teaspoon nutmeg
- Raspberries (optional)
Directions
- Beat Large eggs and sugar. Add in lemon juice and nutmeg. Add in rhubarb. Pour in pie crust. Bake 45 min - 400 degrees for 10 min, then 325 degrees for 30 min.
- Optional: Add in 3/4 c. raspberries in pie shell. Pour rhubarb mix over.
