Mom's (Olcott) Potato Salad
I recently hosted my 65th birthday party and was frantically looking for a good potato salad recipe. I am very particular about potato salad and was struggling to find one that had true flavor. A colleague offered her mother's recipe to me. After reading it, I knew i had found just what I wanted! Ingredients
- 6-8 medium peeled/cubed potatoes.
- 8 medium eggs boiled.
- 1 small diced onion,
- 1 tablespoon of celery seed,
- 3 heaping tablespoons of Mount Olive sweet salad cubed pickles with no juice.
- Salt and pepper to taste.
- 1 cup original Marzetti slaw dressing.
Directions
- Boil potatoes till tender in salt water. Drain to cool.
- Boil eggs for 15 minutes in salt water. Cool eggs completely.
- In a large bowl combine Cubed potatoes and diced eggs
- ADD
- 1 small diced onion,
- 1 tablespoon of celery seed,
- 3 heaping tablespoons of Mount Olive sweet salad cubed pickles.
- Season with salt and pepper to taste.
- 1 cup of original Marzetti slaw dressing.
- Mix together. Let rest several hours or overnight.
- Add paprika to the top.
