Mom’s Deviled Ham Spread / Sandwich Filling
No one will complain about the leftovers from the holiday ham when it shows up next day as a dip or spread for snacks, or as a sandwich filling. This is a throwback recipe from my childhood! Mom made this for picnics and we all loved it. Here’s a close rendition with some tweaks of my own. Just remember to mince everything fine so it spreads well. This recipe adapts well to leftover roast chicken or beef. Ingredients
- 1 pound cooked ham, trimmed of fat & rind and cut into 3/4" cubes (should measure about 3 cups)
- 1/2 cup celery, finely chopped
- 1/4 cup onions, minced (can use green onions)
- 1/4 cup sweet pickles, minced
- 2 pepperoncini peppers, minced (optional)
- DRESSING:
- 1/3 to 1/2 cup mayonnaise
- 1 to 2 tablespoons Dijon mustard
- 1/2 to 1 teaspoon paprika
- Several cranks of freshly ground black pepper
Directions
- Pulse ham cubes in food processor until coarsely chopped. Scrape into medium-size mixing bowl.
- Add celery, onion, pickles, and pepperoncini (optional); toss to blend.
- Mix dressing ingredients together in smaller bowl. Stir into ham and blend well.
- Serve with crackers or vegetable sticks, or use as a sandwich filling.
- YIELD: About 15-20 servings as an appetizer spread, or enough for 8 to 10 sandwich fillings
