  • Mock Potato Salad

    Ingredients

    • 1 med Rutabaga
    • 1 x Pot boiling water
    • 1/2 pkt Sugar substitute
    • 1 Tbsp. Lemon juice
    • 1/2 c. Scallions, finely minced
    • 1 med Dill pickle, minced
    • 1 c. Celery stalks with leaves, minced
    • 1 1/2 tsp Salt
    • 1 dsh Paprika
    • 3/4 c. Mayonnaise
    • 4 x Large eggs, hard-boiled, minced

    Directions

    1. Note: grams noted in Notes section are for carbohydrate grams only.
    2. Pare rutabaga and cut into 4 pcs. Cook in boiling water till tender, about 30 mins. Drain well and cold. After rutabaga has cooled, dice (apprx.
    3. 2 1/2 c.). Place diced vegetable in salad bowl, sprinkle with sweetener and lemon juice. Add in scallions, pickle, celery paprika and mayo. Toss all well. Mix in Large eggs. Refrigeratewell before serving.
