    Love this recipe! It's light and refreshing, perfect for the summer with a glass of white wine. Make it for all of your friends and they will adore you!

    Ingredients

    • 1 multigrain baguette (cut slices on a diagonal, 1/4 in. thick)
    • 1 cup fresh peas
    • 2 tbsp fresh mint, chopped
    • 4 oz goats cheese, plain
    • half of lemon juice and zest
    • 2-4 tbsp of olive oil
    • fresh salt and pepper

    Directions

    1. Preheat the oven to 450 degrees F.
    2. Lay the bread slices in a single layer on a large baking sheet lined with parchment paper. Brush or spray lightly with olive oil. Toast in the oven until lightly golden, 15 to 20 minutes, rotating halfway through.
    3. Cook peas in a bowl either in a microwave for 3 minutes or boil in water for
    4. Mash cooked peas. Add cheese, lemon juice, mint, salt/pepper to taste. Add 1-2 tbsp to thicken it.
    5. Cover and refrigerate until ready to serve.
    6. To serve, top each crostini with a spoonful of the pea and top with grated lemon zest. Serve immediately.
