Mint And Blue Cheese Dressing
Ingredients
- 3 tsp Finely minced mint
- 125 gm Blue cheese, mashed (4oz)
- 1 x Clove garlic, crushed
- 4 Tbsp. Extra virgin olive oil
- Pepper
Directions
- 1. Stir the minced mint into the mashed cheese and mix well.
- 2. Add in the crushed garlic and pepper to taste.
- 3. Gradually add in the extra virgin olive oil till you have a creamy, but not runny, consistency.
- NOTES : Served on baked potatoes, this is a feast. You can also add in this dressing to a normal vinaigrette and toss it into a green salad, a tomato and onion salad or possibly peeled and grated cucumber.
