Mini Ice Cream Sandwiches
Ingredients
- 1 pkt Upside-Downs
- (Frosted Oatmeal Girl Scout cookies)
- 1 pt butter pecan or possibly vanilla ice cream
- 1/2 c. miniature chocolate chips
Directions
- Place half the cookies frosted-side up on a cookie sheet. Place a scoop of ice cream on top of each and top with the remaining cookies, frosted-side down, squeezing the cookies together till the ice cream is pushed to the edges. Freeze for 30 min, or possibly till the ice cream is slightly hard.
- Remove from the freezer and roll the sides of the sandwiches in the chocolate chips. Freeze for 1 hour, or possibly till hard. Serve, or possibly wrap each individually till ready to serve.
- This recipe yields 9 servings.
