    These quiches whip up in no time and are a fun finger food to feed a crowd. Loaded with eggs, bacon, and cheese–they are sure to please! I made these for my son’s first Birthday party brunch and was repeatedly asked for the recipe. So here it is!

    Ingredients

    • 6 slices bacon, cooked and crumbled
    • 5 eggs
    • 2 cups sharp cheddar cheese, shredded
    • 1 cup Bisquick baking mix
    • 1/4 cup sour cream
    • 1 Tablespoon fresh chives, chopped
    • Dash Tabasco sauce
    • Garlic salt and fresh ground black pepper, to taste

    Directions

    1. Pre heat oven to 350 degrees F.
    2. Coat a mini muffin tin (24 count) well with Pam cooking spray.
    3. In a large bowl, beat eggs with whisk.
    4. Stir in Bisquick and sour cream.
    5. Add in bacon crumbles, cheese, chives, Tabasco, garlic salt and pepper.
    6. Spoon evenly into prepared mini muffin tin.
    7. Bake 15-20 minutes, until the tops are lightly browned.
    8. Allow quiches to cool in pan 5 minutes before carefully removing with a small knife or spatula.
