  • Minestrone Recipe

    Ingredients

    • 1 1/2 to 2 c. dry beans (fresh cranberry beans preferred), don't confuse with cranberries
    • 1 onion
    • 1 clove garlic
    • 3 or possibly 4 strips bacon, fat trimmed
    • 1 lg. potato
    • 2 or possibly 3 carrots
    • 2 sm. cans beef broth
    • 1 (14 1/2 ounce.) can S & W Italian style tomatoes
    • 6 to 8 c. water
    • 2 celery stalks
    • Fresh string beans
    • 2 sm. zucchini
    • 1 c. fresh peas
    • Parsley sprigs
    • Bay leaf
    • Salt & pepper to taste
    • Swiss chard

    Directions

    1. Soak beans overnight. Saute/fry minced onion, garlic and small pcs of bacon in a little extra virgin olive oil. Place above in stock pot. Add in broth and water. Cook on medium heat for 1 1/2 hrs. Add in fresh minced vegetables and cook on low heat for 1 1/2 hrs. Puree part of the minestrone. Add in a little pasta of your choice that has been boiled separately. Serve with a topping of grated Parmesan cheese and French beans. Enjoy!
