  • Mince Meat Filling For Pies

    Ingredients

    • 4 lbs. boiled beef, lean, minced fine
    • 8 lbs. tart green apples
    • 1 pound suet, minced
    • 3 lbs. seedless raisins
    • 2 lbs. currants, picked over, wash & liquid removed
    • 1/2 pound citron, cut up fine
    • 1 pound brown sugar
    • 1 quart. cooking molasses
    • 2 quart. sweet cider
    • 1 pt. boiled cider
    • 1 tbsp. salt
    • 1 tbsp. black pepper
    • 1 tbsp. mace
    • 1 tbsp. allspice
    • 4 tbsp. cinnamon
    • 2 nutmeg, grated
    • 1 tbsp. cloves
    • 1 pt. brandy
    • 1 pt. Madeira wine

    Directions

    1. Mix the above ingredients together thoroughly. Hot it on the range till heated through.. Remove from fat. When nearly cold, stir in a pint of good brandy and a pint of Madeira wine. Pour into a crock, cover it tightly and set in a cool place where it will keep good all winter.
