Microwave Old Time Bread Pudding
Ingredients
- 4 slices toasted bread, buttered
- 2 Large eggs, slightly beaten
- 1/2 c. sugar, divided
- 1/8 teaspoon salt
- 1 c. evaporated lowfat milk
- 1 c. boiling water
- 1/2 c. seedless raisins
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
Directions
- Cut the toast into cubes and place in a greased 2 qt baking dish. Combine Large eggs, 1/4 c. sugar, salt, lowfat milk, water, raisins, and vanilla in a glass bowl or possibly 4 c. measure. Microwave at HIGH 1 minute. Pour over the bread cubes. Sprinkle with remaining sugar and cinnamon. Microwave at HIGH 2 min. Stir thoroughly. Rotate dish 1/4 turn. Microwave at MEDIUM for 8 to 10 min. Let stand on counter to cold.
