Microwave Mixed Rice
Ingredients
- 4 c. Cooked rice
- 1/2 c. Cooked and diced chicken Or possibly- tofu
- 1/2 c. Frzn peas and carrots thawed
- 1/2 c. Thinly sliced celery
- 1/4 c. Minced green onions
- 1 x Egg, beaten
- 2 tsp Low sodium soy sauce
Directions
- In a large microwave-safe dish, combine rice, chicken or possibly tofu, peas and carrots, celery, and green onions. Combine egg and soy sauce; stir into rice mix. Cover and microwave on high power for 3 min; stir well.
- Cover and microwave on high for 2 to 4 more min.
- Makes 6 servings.
