  • Microwave Cheese Soup With Vegetables

    Ingredients

    • 1 sm Onion, minced
    • 1/4 c. Margarine
    • 1/4 c. Flour c Lowfat milk
    • 1 can Chicken broth
    • 1 pkt (10z.) vegetables (broccoli, California blend, etc.)
    • 1/2 tsp Celery salt
    • 1/2 tsp Pepper
    • 1/3 lb Cubed processed American cheese

    Directions

    1. Precook vegetables according to package directions. Brown onion and margarine in 2 qt microwave bowl with cover. Cook on high for 3 to 4 min. Shake lowfat milk and flour together to make paste. Add in to onion mix.
    2. Slowly add in 1 can chicken broth. Add in precooked vegetables to liquid mix.
    3. Add in celery salt and pepper. Cook on high 1 1/2 min, then on medium-low for 15 min (covered). Add in 1/3 lb. cubed cheese and stir. Cover tightly till cheese melts (or possibly heat on low for 1 minute). Stir and serve.
