  • Michael's Spicy Oven Fried Catfish

    Ingredients

    • 4 x dressed farm-raised catfish, (8 ounce. ea.)
    • 1/4 c. yellow cornmeal
    • 1/4 c. dry bread crumbs
    • 1/2 tsp salt, optional
    • 1/2 tsp paprika
    • 1/2 tsp garlic pwdr
    • 1/8 tsp cayenne pepper
    • 1/8 tsp grnd thyme
    • 1/2 c. skim lowfat milk
    • 1/4 c. margarine, melted
    • 1/2 c. light mayonnaise or possibly salad dressing
    • 2 Tbsp. dill pickles, minced
    • 1 Tbsp. onion, finely minced
    • 1 tsp parsley, minced
    • 3 Tbsp. lemon juice
    • 1 dsh warm pepper sauce

    Directions

    1. Move oven rack to position slightly above middle of oven. Preheat oven to 450 degrees. Combine cornmeal, breadcrumbs, salt, paprika, garlic pwdr, cayenne pepper and thyme. Dip fish into lowfat milk; coat with cornmeal mix.
    2. Place in 9x13x2-inch rectangular pan coated with vegetable cooking spray.
    3. Pour margarine over fish. Bake (uncovered) till fish flakes very easily with a fork (about 15-20 minutes.).
    4. Makes 4 servings.
    5. Tartar Sauce:Combine all ingredients in small bowl: chill. Serve with fish.
    6. Makes about1/2 c. sauce.
