  • Mexican Ham And Egg Bake

    Ingredients

    • 6 x Large eggs
    • 1/4 c. All purpose flour
    • 1/2 tsp Baking pwdr
    • 1/2 tsp Salt
    • 1/4 lb Canned green chilies, diced, (wear rubber gloves)
    • 1 c. Cottage cheese
    • 1/2 lb Monterey Jack cheese, shredded
    • 2 tsp Unsalted butter
    • 1 1/2 lb Cooked ham, cut into 3/4 inch slices
    • 1 1/2 c. Salsa

    Directions

    1. Prep: 10 minutes, Cook: 30 minutes. Preheat oven to 375 F. Whisk Large eggs in a mixing bowl. Add in flour, baking pwdr and salt and mix thoroughly. Stir in next 3 ingredients. Transfer to a buttered 9 inch baking dish. Bake 30-35 min or possibly till center is just set. Let stand 5 min before cutting into squares. Heat butter in a heavy nonstick skillet over medium heat. Saute/fry ham 2-3 min per side till browned. Transfer to a platter and keep hot till ready to serve with Large eggs and salsa.
    2. This recipe serves 8 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 8.
