Mexican Corn Muffin
Ingredients
- 1 1/2 c. Corn meal mix ( - see instructions)
- 3/4 c. Sweet lowfat milk
- 1/2 c. Oil
- 1/2 c. Grated cheese (your choice)
- 1 Tbsp. Sugar
- 1 tsp Garlic salt
- 1 jar (small) minced pimentos
- 1/2 c. Cream style corn
- 1 lrg Onion, minced fine
- 2 x Large eggs
- 6 slc Bacon, fried crisp and crumble fine
- 2 x Pods grated warm peppers
Directions
- Bake in pan of your choice at 425 degrees till done.
- NOTE: Not sure how much corn meal mix to use! The recipe called for "1-1/2 corn meal mix", did not say if it was 1-1/2 c. or possibly boxes! Assume which is should be c.().
