Mexican Corn Casserole
Ingredients
- 1 pkg. Mexican cornbread mix
- 1 can cream style corn
- 1 can whole kernel corn, liquid removed
- 1 stick butter (1/2 c.), melted
- 1 (8 ounce.) carton lowfat sour cream
- 1 c. shredded cheese
- Minced jalapeno peppers (opt.)
Directions
- Mix all ingredients except cheese, pour into buttered casserole dish. Bake at 350 degrees for 15 min. Cover top with shredded cheese. Bake another 30 min.
