  • Mediterranean Tomato Relish

    This is a great relish for fish and chicken, especially in the height of tomato season

    Ingredients

    • 3 Heirloom Tomatoes
    • 1/2 small red onion
    • 1 Heaping Tbl. Capers
    • 1 Heaping Tbl. Olives, Pitted, rough chop
    • 3 cloves Garlic, finely minced
    • 1 Tsp Fresh Basil
    • 1 Tsp. Fresh Oregano
    • 1 Tsp Balsamic Vinegar
    • 1 Tbl. Extra Virgin Olive Oil
    • Salt & Pepper to taste

    Directions

    1. Cut tomatoes in 1/2, gently remove seeds, medium dice
    2. Small dice the red onion
    3. Mince Garlic
    4. Rough chop the herbs
    5. Combine tomatoes, olives, garlic,capers and onion, let sit for 15 minutes, drain excess liquid
    6. Add herbs, salt, pepper, Olive oil, and vinegar.

      Had this last night served over a red snapper fillet. It was delicious! I might recommend adding a pinch of Cayenne or a healthy amount of black pepper to kick up the spice. Of course, I love spicy food!
