Mediterranean Rice, Yellow Squash And Arugula Salad (Kt)
Ingredients
- Mediterranean Brown Rice leftover Yellow Squash and Arugula Medley leftover
- 1/2 c. arugula leaves - cut in ribbons or possibly to taste
- 1 1/2 c. red grapes cut in half
- 11 ounce yellow corn, canned rinse and drain
- 1/3 c. chopped fresh parsley or possibly to taste
- 1/3 c. red onion small dice - to taste Grapefruit Dressing
- 1/2 c. fresh grapefruit juice
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. seasoned rice vinegar
- 1 tsp lemon pepper
- 1 tsp grnd cumin
- 1/2 tsp salt
- 2 x cloves garlic chopped
Directions
- Combine all ingredients except dressing. Combine dressing ingredients. Dress salad with dressing to taste.
