Mediterranean Haricots Verts
Flavorful Green Beans that are a real winner! Great side dish to any Fish-Seafood-Beef Entrée. Ingredients
- 16 ounces Fresh Haricots Verts
- 3 tablespoons cut Kalamata Olives
- 2 Shallots diced
- 1 tablespoon butter
- salt and black pepper, to taste
- one tablespoon Olive Oil
- one teaspoon red wine vinegar
- one fresh lemon juice only
- Optional Feta cheese crumbles, chopped walnuts to serve, if desired
Directions
- Blanch Haricots Verts in boiling water 2 minutes, remove to an ice bath to stop cooking, using a slotted spoon removed to paper towels to drain, add to a mixing bowl,
- In a fry pan add butter, shallots, lemon juice, salt and pepper and saute 2 minutes, add to Haricots Verts
- Add all other ingredients, stir to mix gently.
- Serve at room temperature.
- (If preferred chill first before serving).
- Enjoy!
